Double Egg Oyster Fritters

Ingredients

  • 25 oysters, chopped fine
  • 2 eggs
  • 1 cup milk
  • 2 cups flour
  • pinch of salt
  • ½ teaspoon baking powder
  • boiling fat for frying

Method

  1. 1 Beat 2 eggs very light, then mix in 1 cup milk, 2 cups flour, and a pinch of salt until free from lumps.
  2. 2 Stir in the chopped oysters and ½ teaspoon baking powder, mixing well.
  3. 3 Drop spoonfuls of the batter into boiling fat and fry until golden.
  4. 4 Lift out with a skimmer, drain on brown paper, and serve very hot.
