Double Egg Oyster Fritters
Ingredients
- 25 oysters, chopped fine
- 2 eggs
- 1 cup milk
- 2 cups flour
- pinch of salt
- ½ teaspoon baking powder
- boiling fat for frying
Method
- 1 Beat 2 eggs very light, then mix in 1 cup milk, 2 cups flour, and a pinch of salt until free from lumps.
- 2 Stir in the chopped oysters and ½ teaspoon baking powder, mixing well.
- 3 Drop spoonfuls of the batter into boiling fat and fry until golden.
- 4 Lift out with a skimmer, drain on brown paper, and serve very hot.
