Double Cream Vanilla Bean Ice Cream

Ingredients

  • sugar
  • half the cream
  • 1 vanilla bean
  • remaining cream

Method

  1. 1 Combine sugar and half the cream in a double boiler over heat.
  2. 2 Split the vanilla bean, scrape out seeds, and add seeds and broken bean pieces to the hot cream.
  3. 3 Stir until sugar dissolves, then strain through a colander.
  4. 4 Let mixture cool, then add remaining cream and freeze.
  5. 5 Repack ice cream and let ripen for two hours before serving.
