Double Cream Vanilla Bean Ice Cream
Ingredients
- sugar
- half the cream
- 1 vanilla bean
- remaining cream
Method
- 1 Combine sugar and half the cream in a double boiler over heat.
- 2 Split the vanilla bean, scrape out seeds, and add seeds and broken bean pieces to the hot cream.
- 3 Stir until sugar dissolves, then strain through a colander.
- 4 Let mixture cool, then add remaining cream and freeze.
- 5 Repack ice cream and let ripen for two hours before serving.
