Double Coated Sugar Almonds
Ingredients
- 2 cups granulated sugar
- 1/2 cup blanched almonds
- Water
- Carmine (optional, for pink color)
- Flavoring (optional)
Method
- 1 Place 1 cup of sugar and a little water in a saucepan. Stir until dissolved, then cook to the ball stage without touching, testing only.
- 2 Add 1/2 cup blanched almonds. Stir off the heat until nuts are coated with sugar, then remove from pan before they clump.
- 3 Boil another cup of sugar to the ball stage. Add the coated almonds and stir off heat to apply a second coating.
- 4 Repeat the process for a third coating if desired. Add carmine or flavoring before the final coating.
