Double Breaded Fried Oysters

Ingredients

  • large oysters
  • beaten egg
  • dried bread-crumbs
  • salt
  • pepper
  • deep fat for frying

Method

  1. 1 Drain large oysters on a cloth until dry.
  2. 2 Dip oysters in beaten egg, then coat in dried bread-crumbs. Sprinkle with salt and pepper.
  3. 3 Let oysters sit for two hours. Dip them in egg and crumbs a second time.
  4. 4 Fry in deep fat until brown. Drain on brown paper and serve immediately.
