Devilled Lobster With Lobster Coral Butter

  • 1 boiled lobster
  • salt
  • mustard
  • cayenne pepper
  • mushroom catsup
  • hot water
  • 1 tbsp melted butter

Method

  1. 1 Remove the meat from the boiled lobster and reserve the coral (roe).
  2. 2 Season the lobster meat with salt, mustard, cayenne, and mushroom catsup.
  3. 3 Place the seasoned lobster in a buttered saucepan and heat thoroughly, adding a little hot water to prevent burning.
  4. 4 Rub the reserved coral smooth with the cooking liquid, mix with melted butter, and add to the lobster.
  5. 5 Keep hot for five more minutes and serve immediately.
