Devilled Lobster With Lobster Coral Butter
Ingredients
- 1 boiled lobster
- salt
- mustard
- cayenne pepper
- mushroom catsup
- hot water
- 1 tbsp melted butter
Method
- 1 Remove the meat from the boiled lobster and reserve the coral (roe).
- 2 Season the lobster meat with salt, mustard, cayenne, and mushroom catsup.
- 3 Place the seasoned lobster in a buttered saucepan and heat thoroughly, adding a little hot water to prevent burning.
- 4 Rub the reserved coral smooth with the cooking liquid, mix with melted butter, and add to the lobster.
- 5 Keep hot for five more minutes and serve immediately.
