Deviled Parsnips With Mustard Breadcrumbs

Ingredients

  • 3 large parsnips
  • ½ cup butter
  • 2 tsp salt
  • 4 tbsp dry mustard
  • ½ tsp cayenne pepper
  • 1 tsp white pepper
  • flour
  • buttered breadcrumbs

Method

  1. 1 Wash and scrape parsnips (do not pare). Cut in half lengthwise and place cut-side up on a rack in a hot oven (425°F). Bake for 30-40 minutes until soft and lightly browned.
  2. 2 While parsnips bake, soften butter without melting. Mix in salt, dry mustard, cayenne, and white pepper. Add flour gradually to create a stiff paste.
  3. 3 Remove parsnips from oven. Make four slanting cuts in each half and fill with the mustard paste. Spread remaining paste over the flat sides.
  4. 4 Arrange on a serving dish. Sift buttered breadcrumbs over the top. Brown under a broiler or on the upper rack of an oven until crumbs are golden.
