Deviled Eggs With Cheese Sauce
Ingredients
- 12 large eggs, hard-boiled
- 12 egg yolks (reserved from hard-boiled eggs)
- 1 egg white (reserved)
- 12 tbsp butter, divided
- 12 tbsp creamed curds
- 1 tbsp grated Parmesan cheese
- ½ cup heavy cream
- 1 oz butter
- 2 tsp all-purpose flour
- Salt and pepper to taste
- Grated cheese for topping
Method
- 1 Boil eggs until hard, cool, peel, and cut in half. Remove yolks and reserve whites.
- 2 Mash yolks with 12 tbsp butter, 12 tbsp curds, Parmesan, salt, and pepper. Cook briefly in saucepan, stirring in reserved egg yolk and white until thickened.
- 3 Fill egg whites with yolk mixture. Arrange on a dish.
- 4 Whisk cream, 1 oz butter, flour, salt, and pepper in a saucepan. Boil for one minute to thicken.
- 5 Pour sauce over eggs, dot with butter, and sprinkle with grated cheese. Broil until golden and serve immediately.
