Deviled Eggs With Cheese Sauce

Ingredients

  • 12 large eggs, hard-boiled
  • 12 egg yolks (reserved from hard-boiled eggs)
  • 1 egg white (reserved)
  • 12 tbsp butter, divided
  • 12 tbsp creamed curds
  • 1 tbsp grated Parmesan cheese
  • ½ cup heavy cream
  • 1 oz butter
  • 2 tsp all-purpose flour
  • Salt and pepper to taste
  • Grated cheese for topping

Method

  1. 1 Boil eggs until hard, cool, peel, and cut in half. Remove yolks and reserve whites.
  2. 2 Mash yolks with 12 tbsp butter, 12 tbsp curds, Parmesan, salt, and pepper. Cook briefly in saucepan, stirring in reserved egg yolk and white until thickened.
  3. 3 Fill egg whites with yolk mixture. Arrange on a dish.
  4. 4 Whisk cream, 1 oz butter, flour, salt, and pepper in a saucepan. Boil for one minute to thicken.
  5. 5 Pour sauce over eggs, dot with butter, and sprinkle with grated cheese. Broil until golden and serve immediately.
