Deviled Crab And Mushroom Sauce

Ingredients

  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 hard-boiled egg yolks, rubbed through a sieve
  • Salt to taste
  • 1 tsp paprika
  • 1 tsp lemon juice
  • Wine to taste
  • Cayenne to taste
  • Mustard to taste
  • Tabasco sauce to taste
  • 1 cup crab meat
  • ¼ cup canned mushrooms, cut in quarters
  • Toast for serving

Method

  1. 1 Melt butter in a saucepan, add flour, and blend well.
  2. 2 Stir in milk and cook until thickened.
  3. 3 Remove from heat and stir in the sieved egg yolks.
  4. 4 Season with salt, paprika, lemon juice, wine, cayenne, mustard, and Tabasco.
  5. 5 Fold in the crab meat and mushrooms, then heat through.
  6. 6 Serve the mixture over toast.
