Deep Fried Veal Croquettes
Ingredients
- 1 breakfast-cupful white sauce (made from flour, milk, butter, salt, pepper)
- 1 heaped teaspoonful grated Gruyère cheese
- 1 teaspoonful lemon juice
- 1 egg yolk
- 1 cup finely minced veal or lean meat
- 1 egg white
- grated breadcrumbs
- deep fat for frying
Method
- 1 Make a thick white sauce using flour, milk, butter, salt, and pepper.
- 2 Stir in grated Gruyère cheese, lemon juice, and egg yolk; let cool completely.
- 3 Mix the cooled sauce with finely minced veal or lean meat.
- 4 Form the mixture into croquettes, roll in egg white, then breadcrumbs.
- 5 Fry in deep fat until golden brown.
