Deep Fried Veal Croquettes

Ingredients

  • 1 breakfast-cupful white sauce (made from flour, milk, butter, salt, pepper)
  • 1 heaped teaspoonful grated Gruyère cheese
  • 1 teaspoonful lemon juice
  • 1 egg yolk
  • 1 cup finely minced veal or lean meat
  • 1 egg white
  • grated breadcrumbs
  • deep fat for frying

Method

  1. 1 Make a thick white sauce using flour, milk, butter, salt, and pepper.
  2. 2 Stir in grated Gruyère cheese, lemon juice, and egg yolk; let cool completely.
  3. 3 Mix the cooled sauce with finely minced veal or lean meat.
  4. 4 Form the mixture into croquettes, roll in egg white, then breadcrumbs.
  5. 5 Fry in deep fat until golden brown.
