Deep Fried Shoestring French Fries
Ingredients
- potatoes
- ice water
- towels
- pure leaf lard
Method
- 1 Slice potatoes thin or cut into strips.
- 2 Soak in ice water for half an hour.
- 3 Dry thoroughly between two towels.
- 4 Plunge into boiling deep fat.
- 5 Remove when delicately browned.
- 6 Drain in a hot colander and serve at once.
