Deep Fried Salmon Croquettes
Ingredients
- 1 tbsp butter
- 3 tbsp flour
- 1 cup cream
- salt to taste
- red pepper to taste
- minced parsley
- juice of 1 lemon
- 1 can flaked salmon
- egg for dipping
- breadcrumbs for coating
- deep fat for frying
Method
- 1 Melt butter in a saucepan and whisk in flour. Cook briefly while stirring.
- 2 Gradually add cream, stirring constantly until the mixture thickens.
- 3 Remove from heat and season with salt, red pepper, and minced parsley.
- 4 Stir in lemon juice and flaked salmon. Mix thoroughly and let cool.
- 5 Shape mixture into croquettes, dip in beaten egg, then coat in breadcrumbs.
- 6 Fry in deep fat until golden brown and serve immediately.
