Deep Fried Salmon Croquettes

Ingredients

  • 1 tbsp butter
  • 3 tbsp flour
  • 1 cup cream
  • salt to taste
  • red pepper to taste
  • minced parsley
  • juice of 1 lemon
  • 1 can flaked salmon
  • egg for dipping
  • breadcrumbs for coating
  • deep fat for frying

Method

  1. 1 Melt butter in a saucepan and whisk in flour. Cook briefly while stirring.
  2. 2 Gradually add cream, stirring constantly until the mixture thickens.
  3. 3 Remove from heat and season with salt, red pepper, and minced parsley.
  4. 4 Stir in lemon juice and flaked salmon. Mix thoroughly and let cool.
  5. 5 Shape mixture into croquettes, dip in beaten egg, then coat in breadcrumbs.
  6. 6 Fry in deep fat until golden brown and serve immediately.
