Deep Fried Oyster Croquettes
Ingredients
- 1 dozen oysters
- 1 tablespoon butter
- 1 tablespoon flour
- 2 egg yolks
- Salt and pepper to taste
- 1 egg, beaten
- Breadcrumbs
- Oil for deep frying
Method
- 1 Drain and wash oysters. Place in a hot kettle, shake until gills curl and liquid boils. Boil for 5 minutes, then drain, reserving ½ cup of the liquid.
- 2 Chop the oysters. Rub butter and flour together, then add oysters and reserved liquor. Stir over heat until boiling.
- 3 Move mixture to the back of the stove and cook for 10 minutes. Add seasoning and egg yolks, cook for 1 more minute, then turn out to cool.
- 4 Chill the mixture overnight or on ice for at least 4 hours until cold.
- 5 Form into small cylinder shapes. Dip in beaten egg, then coat with breadcrumbs.
- 6 Fry in deep hot fat until golden brown. Serve immediately.
