Ingredients

  • 1 dozen oysters
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2 egg yolks
  • Salt and pepper to taste
  • 1 egg, beaten

  2. 2 Chop the oysters. Rub butter and flour together, then add oysters and reserved liquor. Stir over heat until boiling.
  3. 3 Move mixture to the back of the stove and cook for 10 minutes. Add seasoning and egg yolks, cook for 1 more minute, then turn out to cool.
  4. 4 Chill the mixture overnight or on ice for at least 4 hours until cold.
  5. 5 Form into small cylinder shapes. Dip in beaten egg, then coat with breadcrumbs.
  6. 6 Fry in deep hot fat until golden brown. Serve immediately.
