Deep Fried Lobster Croquettes
Ingredients
- 1 boiled lobster, chopped fine
- Seasoning to taste
- Butter
- Flour
- Milk
- 1 egg yolk
- 1 egg, beaten (for dipping)
- Bread crumbs
- Hot fat for deep frying
- Lobster claws (for garnish)
Method
- 1 Rub butter and flour together in a saucepan. Add milk and stir until a smooth, thick paste forms.
- 2 Stir in the egg yolk and cook for a moment. Add the chopped lobster and seasoning, then turn out to cool completely.
- 3 Form the mixture into cutlet-shaped croquettes. Dip each in beaten egg, then roll in bread crumbs.
- 4 Deep fry in hot fat until golden. Garnish with a small lobster claw on the end of each cutlet and serve.
