Deep Fried Lobster Croquettes

Ingredients

  • 1 boiled lobster, chopped fine
  • Seasoning to taste
  • Butter
  • Flour
  • Milk
  • 1 egg yolk
  • 1 egg, beaten (for dipping)
  • Bread crumbs
  • Hot fat for deep frying
  • Lobster claws (for garnish)

Method

  1. 1 Rub butter and flour together in a saucepan. Add milk and stir until a smooth, thick paste forms.
  2. 2 Stir in the egg yolk and cook for a moment. Add the chopped lobster and seasoning, then turn out to cool completely.
  3. 3 Form the mixture into cutlet-shaped croquettes. Dip each in beaten egg, then roll in bread crumbs.
  4. 4 Deep fry in hot fat until golden. Garnish with a small lobster claw on the end of each cutlet and serve.
