Deep Fried Herring And Potato Croquettes
Ingredients
- bloaters or herrings
- mashed potatoes
- butter
- cream
- egg
- breadcrumbs
- deep fat for frying
Method
- 1 Partly boil the herrings, then skin and debone them.
- 2 Mix the herrings with an equal amount of mashed potatoes and a lump of butter.
- 3 Add enough cream to soften the mixture, then form into balls.
- 4 Dip each ball in beaten egg and coat with breadcrumbs.
- 5 Fry in deep fat until golden brown.
