Ingredients

  • bloaters or herrings
  • mashed potatoes
  • butter
  • cream
  • egg
  • breadcrumbs
  • deep fat for frying

Method

  1. 1 Partly boil the herrings, then skin and debone them.
  2. 2 Mix the herrings with an equal amount of mashed potatoes and a lump of butter.
  3. 3 Add enough cream to soften the mixture, then form into balls.
  4. 4 Dip each ball in beaten egg and coat with breadcrumbs.
  5. 5 Fry in deep fat until golden brown.
