Deep Fried Eggplant Fritters

Ingredients

  • 1 eggplant, peeled and sliced
  • Cold water
  • Salt
  • Pepper
  • 2 eggs, well-beaten
  • Flour
  • Deep fat for frying

Method

  1. 1 Boil eggplant slices in cold water or boiling salted and acidulated water until soft. Drain well.
  2. 2 Mash the eggplant smooth. Season with salt and pepper, then mix in the beaten eggs and enough flour to form a thick batter.
  3. 3 Fry spoonfuls of the batter in deep fat until golden brown.
