Deep Fried Eggplant Fritters
Ingredients
- 1 eggplant, peeled and sliced
- Cold water
- Salt
- Pepper
- 2 eggs, well-beaten
- Flour
- Deep fat for frying
Method
- 1 Boil eggplant slices in cold water or boiling salted and acidulated water until soft. Drain well.
- 2 Mash the eggplant smooth. Season with salt and pepper, then mix in the beaten eggs and enough flour to form a thick batter.
- 3 Fry spoonfuls of the batter in deep fat until golden brown.
