Deep Fried Crab Stuffed Shells
Ingredients
- 4 hard-boiled eggs, separated
- 2 tbsp butter
- 1 tbsp flour
- 1 cup milk
- 1/2 cup bread crumbs
- 1 lb crab meat, flaked
- Salt and pepper to taste
- 1 egg, beaten (for dipping)
- 1/2 cup bread crumbs (for coating)
- Oil for deep frying
Method
- 1 Chop egg whites finely and sieve egg yolks. Make a white sauce by rubbing butter and flour together, adding milk, and stirring until boiling.
- 2 Remove sauce from heat. Stir in bread crumbs, chopped whites, and sieved yolks. Season with salt and pepper.
- 3 Mix the crab meat into the egg mixture. Fill crab shells tightly with the mixture.
- 4 Dip filled shells in beaten egg, then coat thickly with bread crumbs. Optionally double-coat the top.
- 5 Deep fry in hot oil for one minute until golden. Serve immediately.
