Deep Fried Crab Stuffed Shells

Ingredients

  • 4 hard-boiled eggs, separated
  • 2 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 1/2 cup bread crumbs
  • 1 lb crab meat, flaked
  • Salt and pepper to taste
  • 1 egg, beaten (for dipping)
  • 1/2 cup bread crumbs (for coating)
  • Oil for deep frying

Method

  1. 1 Chop egg whites finely and sieve egg yolks. Make a white sauce by rubbing butter and flour together, adding milk, and stirring until boiling.
  2. 2 Remove sauce from heat. Stir in bread crumbs, chopped whites, and sieved yolks. Season with salt and pepper.
  3. 3 Mix the crab meat into the egg mixture. Fill crab shells tightly with the mixture.
  4. 4 Dip filled shells in beaten egg, then coat thickly with bread crumbs. Optionally double-coat the top.
  5. 5 Deep fry in hot oil for one minute until golden. Serve immediately.
