Deep Fried Clam Fritters

Ingredients

  • 6 clams, minced
  • 1 ½ cups milk and clam juice combined
  • 2 ¼ cups flour
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 1 egg, well-beaten
  • 2 tablespoons baking powder
  • 1 tablespoon grated onion
  • 3 tablespoons finely minced parsley

Method

  1. 1 Mince the clams finely and place them in a bowl.
  2. 2 Add enough milk to the clam juice to make 1 ½ cups total, then pour over the clams.
  3. 3 Add flour, salt, pepper, beaten egg, baking powder, onion, and parsley. Beat to a smooth batter.
  4. 4 Fry spoonfuls of batter in deep fat until golden brown.
