Deep Fried Clam Fritters
Ingredients
- 6 clams, minced
- 1 ½ cups milk and clam juice combined
- 2 ¼ cups flour
- 1 ½ teaspoons salt
- ½ teaspoon pepper
- 1 egg, well-beaten
- 2 tablespoons baking powder
- 1 tablespoon grated onion
- 3 tablespoons finely minced parsley
Method
- 1 Mince the clams finely and place them in a bowl.
- 2 Add enough milk to the clam juice to make 1 ½ cups total, then pour over the clams.
- 3 Add flour, salt, pepper, beaten egg, baking powder, onion, and parsley. Beat to a smooth batter.
- 4 Fry spoonfuls of batter in deep fat until golden brown.
