Deep Fried Brazil Nut Cakes
Ingredients
- 3 ounces Brazil nuts, shelled
- 3 tablespoons heavy cream
- 1 whole egg
- 3 egg yolks
- 1 teaspoon tarragon vinegar
- 0.5 teaspoon salt
- 0.5 teaspoon white pepper
- 1 teaspoon minced parsley
- 1 egg, beaten (for coating)
- Breadcrumbs (for coating)
- Oil for frying
Method
- 1 Scrape the brown skins off the Brazil nuts and pound them into a smooth paste using a mortar and pestle.
- 2 Mix in the cream, whole egg, yolks, vinegar, salt, pepper, and parsley until well combined.
- 3 Butter six small molds, fill with the mixture, and place them in a baking tin with a little boiling water.
- 4 Bake in a 350°F oven for 12-15 minutes until set, then let cool completely.
- 5 Remove from molds, brush with beaten egg, coat in breadcrumbs, and fry in hot oil until golden brown.
