Deep Fried Brazil Nut Cakes

Ingredients

  • 3 ounces Brazil nuts, shelled
  • 3 tablespoons heavy cream
  • 1 whole egg
  • 3 egg yolks
  • 1 teaspoon tarragon vinegar
  • 0.5 teaspoon salt
  • 0.5 teaspoon white pepper
  • 1 teaspoon minced parsley
  • 1 egg, beaten (for coating)
  • Breadcrumbs (for coating)
  • Oil for frying

Method

  1. 1 Scrape the brown skins off the Brazil nuts and pound them into a smooth paste using a mortar and pestle.
  2. 2 Mix in the cream, whole egg, yolks, vinegar, salt, pepper, and parsley until well combined.
  3. 3 Butter six small molds, fill with the mixture, and place them in a baking tin with a little boiling water.
  4. 4 Bake in a 350°F oven for 12-15 minutes until set, then let cool completely.
  5. 5 Remove from molds, brush with beaten egg, coat in breadcrumbs, and fry in hot oil until golden brown.
