Decorated Mini Sponge Cake Fours
Ingredients
- sponge cake
- jelly or frosting
- pale green icing (flavored with pistachio)
- pale pink icing (flavored with rose)
- yellow icing (flavored with orange)
- white icing (flavored with almond)
- unsweetened chocolate
- candied violets
- bits of citron
- candied cherries
- angelica
Method
- 1 Bake a simple, light sponge cake in a shallow tin or pan.
- 2 When cold, turn out and cut into small dominoes or diamonds about an inch deep.
- 3 Split each piece and spread jelly or frosting between the layers.
- 4 Ice tops and sides with tinted icings (pistachio, rose, orange, or almond).
- 5 For chocolate versions, ice with white icing, then add a layer of melted chocolate and dip brush in to make spots.
- 6 Decorate with candied violets, citron, cherries, or angelica.
