Date Muffins
Ingredients
- 1/3 cup butter
- 1 egg
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1/2 lb dates, pitted and chopped
Method
- 1 Cream the butter and add the beaten egg.
- 2 Sift the flour, baking powder, and salt together.
- 3 Alternately add the dry ingredients and milk to the butter mixture, stirring until combined.
- 4 Stir in the pitted and chopped dates.
- 5 Pour into greased muffin pans and bake in a hot oven (425°F) for about 25 minutes.
