Date Fig Walnut Cookies
Ingredients
- 1 cup dates, chopped
- 1 cup figs, chopped
- 1 cup English or common walnuts, chopped
- 1 ½ cups brown sugar
- ½ cup butter
- 1 tsp cinnamon
- ½ tsp allspice
- 1 tbsp baking soda dissolved in 1 tbsp boiling water
- 2 eggs
- 3 cups flour
Method
- 1 Chop the dates, figs, and walnuts into small pieces.
- 2 Mix the chopped fruits and nuts with the brown sugar, butter, cinnamon, and allspice.
- 3 Add the eggs and the baking soda dissolved in boiling water to the mixture.
- 4 Stir in the flour until well combined.
- 5 Drop spoonfuls of dough onto a well-greased baking pan.
- 6 Bake in a slow oven (300°F) until set.
