Dark Brown Roux Sauce
Ingredients
- 4 tablespoons fat
- 3 tablespoons flour
- 1 cup stock or water
- Salt and pepper to taste
Method
- 1 Place 4 tablespoons of fat in a frying pan over medium heat.
- 2 Add 3 tablespoons of flour and stir constantly until the mixture turns a very dark brown color.
- 3 Gradually whisk in 1 cup of stock or water until the mixture is perfectly smooth.
- 4 Bring to a boil and cook for 3 minutes, stirring occasionally. Season with salt and pepper to taste.
