Dark Brown Roux Sauce

Ingredients

  • 4 tablespoons fat
  • 3 tablespoons flour
  • 1 cup stock or water
  • Salt and pepper to taste

Method

  1. 1 Place 4 tablespoons of fat in a frying pan over medium heat.
  2. 2 Add 3 tablespoons of flour and stir constantly until the mixture turns a very dark brown color.
  3. 3 Gradually whisk in 1 cup of stock or water until the mixture is perfectly smooth.
  4. 4 Bring to a boil and cook for 3 minutes, stirring occasionally. Season with salt and pepper to taste.
