  • 4 thick slices bacon
  • 4 cups young dandelion greens
  • 2 tablespoons butter
  • ½ cup cream
  • 2 eggs
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 4 tablespoons vinegar
  • ½ teaspoon paprika
  • Black pepper to taste

Method

  1. 1 Wash dandelion greens, pat dry, and place in a salad bowl.
  2. 2 Cut bacon into small cubes and fry until crisp. Pour hot bacon and fat over the greens.
