Dandelion Salad With Warm Bacon Dressing
Ingredients
- 4 thick slices bacon
- 4 cups young dandelion greens
- 2 tablespoons butter
- ½ cup cream
- 2 eggs
- 1 teaspoon salt
- 1 tablespoon sugar
- 4 tablespoons vinegar
- ½ teaspoon paprika
- Black pepper to taste
Method
- 1 Wash dandelion greens, pat dry, and place in a salad bowl.
- 2 Cut bacon into small cubes and fry until crisp. Pour hot bacon and fat over the greens.
- 3 In a skillet, melt butter and cream over low heat.
- 4 Beat eggs with salt, pepper, sugar, and vinegar. Stir into the warm cream mixture.
- 5 Cook over high heat, stirring constantly, until the dressing thickens.
- 6 Pour the hot dressing immediately over the salad and serve.
