Damson Plum Jam
Ingredients
- 2 quarts ripe damson plums
- 3 pints damson plums (peeled)
- Sugar (equal weight to the prepared fruit)
Method
- 1 Peel the skin off 3 pints of the damsons. Place all 2 quarts of plums into a pot, with the peeled ones skin-side down.
- 2 Place the pot inside a larger pot of boiling water (bain-marie). Cover tightly to prevent water from entering. Cook until the plums are tender.
- 3 Remove the plums and discard the skins and stones. Weigh the remaining fruit pulp.
- 4 Add an equal weight of finely broken sugar to the fruit pulp. Return to the heat and boil rapidly.
- 5 Boil until the mixture thickens and pulls away from the bottom of the pan. Skim off any foam while hot, then pour into glass jars.
