Damson Plum Jam

Ingredients

  • 2 quarts ripe damson plums
  • 3 pints damson plums (peeled)
  • Sugar (equal weight to the prepared fruit)

Method

  1. 1 Peel the skin off 3 pints of the damsons. Place all 2 quarts of plums into a pot, with the peeled ones skin-side down.
  2. 2 Place the pot inside a larger pot of boiling water (bain-marie). Cover tightly to prevent water from entering. Cook until the plums are tender.
  3. 3 Remove the plums and discard the skins and stones. Weigh the remaining fruit pulp.
  4. 4 Add an equal weight of finely broken sugar to the fruit pulp. Return to the heat and boil rapidly.
  5. 5 Boil until the mixture thickens and pulls away from the bottom of the pan. Skim off any foam while hot, then pour into glass jars.
