Custard Soaked Sponge Cake Pudding
Ingredients
- butter (for greasing)
- raisins or currants
- bits of citron
- stale sponge cake
- candied fruit
- 3 eggs
- 1 pint milk
- sugar to taste
Method
- 1 Butter a mould and line it with raisins, currants, or bits of citron.
- 2 Fill the mould nearly full with alternate layers of stale sponge cake and candied fruit or raisins.
- 3 Beat 3 eggs with 1 pint of milk and sweeten to taste. Pour this custard over the layers.
- 4 Place the mould in a pan of boiling water to one-third its height. Bake for 1 hour in a moderate oven (350°F).
