Custard Soaked Sponge Cake Pudding

Ingredients

  • butter (for greasing)
  • raisins or currants
  • bits of citron
  • stale sponge cake
  • candied fruit
  • 3 eggs
  • 1 pint milk
  • sugar to taste

Method

  1. 1 Butter a mould and line it with raisins, currants, or bits of citron.
  2. 2 Fill the mould nearly full with alternate layers of stale sponge cake and candied fruit or raisins.
  3. 3 Beat 3 eggs with 1 pint of milk and sweeten to taste. Pour this custard over the layers.
  4. 4 Place the mould in a pan of boiling water to one-third its height. Bake for 1 hour in a moderate oven (350°F).
