Custard Cornbread

Ingredients

  • 1 egg
  • 1¾ cups milk
  • 2 tablespoons sugar
  • 1 cup cornmeal
  • 1/3 cup flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 tablespoon shortening

Method

  1. 1 Beat the egg and add 1 cup of milk. Stir in sugar, cornmeal, flour, salt, and baking powder which have been sifted together.
  2. 2 Melt shortening in a frying pan. Pour in the batter, then pour on the remainder of the milk without stirring.
  3. 3 Bake for about 25 minutes in a 425°F oven until a line of creamy custard forms through the bread.
  4. 4 Cut into triangles and serve.
