Custard Cornbread
Ingredients
- 1 egg
- 1¾ cups milk
- 2 tablespoons sugar
- 1 cup cornmeal
- 1/3 cup flour
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1 tablespoon shortening
Method
- 1 Beat the egg and add 1 cup of milk. Stir in sugar, cornmeal, flour, salt, and baking powder which have been sifted together.
- 2 Melt shortening in a frying pan. Pour in the batter, then pour on the remainder of the milk without stirring.
- 3 Bake for about 25 minutes in a 425°F oven until a line of creamy custard forms through the bread.
- 4 Cut into triangles and serve.
