Custard Based Peach Ice Cream

Ingredients

  • 1 quart peaches, peeled and sliced
  • 1 ½ cups sugar
  • 3 pints milk
  • ¼ cup cornstarch
  • 2 eggs, well beaten
  • 1 pint milk
  • 1 cup sugar

Method

  1. 1 Toss sliced peaches with 1 ½ cups sugar and let sit for one hour.
  2. 2 In a saucepan, combine 3 pints milk and cornstarch; stir to dissolve.
  3. 3 Bring mixture to a boil and cook for ten minutes.
  4. 4 Remove from heat and whisk in beaten eggs, 1 pint milk, and 1 cup sugar.
  5. 5 Beat the custard mixture well and allow it to cool completely.
  6. 6 Crush the macerated peaches through a fine sieve and stir into the custard.
  7. 7 Freeze the mixture in an ice cream maker according to manufacturer instructions.
