Custard Based Peach Ice Cream
Ingredients
- 1 quart peaches, peeled and sliced
- 1 ½ cups sugar
- 3 pints milk
- ¼ cup cornstarch
- 2 eggs, well beaten
- 1 pint milk
- 1 cup sugar
Method
- 1 Toss sliced peaches with 1 ½ cups sugar and let sit for one hour.
- 2 In a saucepan, combine 3 pints milk and cornstarch; stir to dissolve.
- 3 Bring mixture to a boil and cook for ten minutes.
- 4 Remove from heat and whisk in beaten eggs, 1 pint milk, and 1 cup sugar.
- 5 Beat the custard mixture well and allow it to cool completely.
- 6 Crush the macerated peaches through a fine sieve and stir into the custard.
- 7 Freeze the mixture in an ice cream maker according to manufacturer instructions.
