Curry Saffron Butter Sauce

Ingredients

  • 2 oz butter
  • 1 tbsp curry powder
  • ½ nutmeg, grated
  • ½ tsp saffron
  • 2 tbsp flour
  • water or broth

Method

  1. 1 Melt 2 oz butter in a saucepan. Stir in curry powder, grated nutmeg, saffron, and flour.
  2. 2 Add enough boiling water or broth to cover the mixture. Let it stew for 15 minutes.
  3. 3 Strain the sauce, stir in a little more butter, and serve immediately.
