Curry Rice Balls
Ingredients
- 8 oz rice
- 1/2 oz butter
- 1 tsp curry powder
- 2 eggs
- Salt and pepper to taste
- Oil or butter for frying
- 3/4 cup breadcrumbs
Method
- 1 Boil rice in 1 pint water with butter, salt, and pepper until dry and tender.
- 2 Stir in curry powder and one beaten egg to bind the rice mixture.
- 3 Form the rice into balls, dip in the second beaten egg, then coat in breadcrumbs.
- 4 Fry in oil or butter until golden brown.
