Curry Rice Balls

Ingredients

  • 8 oz rice
  • 1/2 oz butter
  • 1 tsp curry powder
  • 2 eggs
  • Salt and pepper to taste
  • Oil or butter for frying
  • 3/4 cup breadcrumbs

Method

  1. 1 Boil rice in 1 pint water with butter, salt, and pepper until dry and tender.
  2. 2 Stir in curry powder and one beaten egg to bind the rice mixture.
  3. 3 Form the rice into balls, dip in the second beaten egg, then coat in breadcrumbs.
  4. 4 Fry in oil or butter until golden brown.
