Curry Cauliflower And Potato Stew

Ingredients

  • 1 cup cauliflower, cut into flowerettes
  • 1 cup potatoes, diced
  • 1 ½ tbsp butter
  • 1 tsp curry powder
  • 2 tbsp tomatoes, chopped
  • 1 tsp grated onion
  • 1 tsp chopped green pepper
  • boiling water
  • 1 tsp flour
  • 1 ½ tbsp butter

Method

  1. 1 Place cauliflower and potatoes in a large skillet with 1 ½ tbsp butter and curry powder. Simmer for a few minutes without browning.
  2. 2 Add tomatoes, grated onion, and green pepper. Pour in enough boiling water to cover the vegetables.
  3. 3 Cover and simmer gently until vegetables are tender and liquid reduces to one-third of the original amount.
  4. 4 If the mixture is too thin, stir in 1 tsp flour to thicken to a gravy consistency.
  5. 5 Remove from heat and stir in 1 ½ tbsp butter. Serve hot in a shallow dish.
