Curry Cauliflower And Potato Stew
Ingredients
- 1 cup cauliflower, cut into flowerettes
- 1 cup potatoes, diced
- 1 ½ tbsp butter
- 1 tsp curry powder
- 2 tbsp tomatoes, chopped
- 1 tsp grated onion
- 1 tsp chopped green pepper
- boiling water
- 1 tsp flour
- 1 ½ tbsp butter
Method
- 1 Place cauliflower and potatoes in a large skillet with 1 ½ tbsp butter and curry powder. Simmer for a few minutes without browning.
- 2 Add tomatoes, grated onion, and green pepper. Pour in enough boiling water to cover the vegetables.
- 3 Cover and simmer gently until vegetables are tender and liquid reduces to one-third of the original amount.
- 4 If the mixture is too thin, stir in 1 tsp flour to thicken to a gravy consistency.
- 5 Remove from heat and stir in 1 ½ tbsp butter. Serve hot in a shallow dish.
