Curried Vegetable And Lentil Stew
Ingredients
- 1/2 cup dried peas, beans, or lentils, soaked overnight and cooked until tender
- 1/2 cup turnips, chopped
- 1/2 cup carrots, chopped
- 1 cup outer parts of celery, chopped
- 1/2 cup peas
- 1/2 teaspoon celery salt
- 1/8 teaspoon pepper
- 3 tablespoons drippings
- 3 tablespoons whole wheat flour
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1/2 cup meat stock or water
- 1 cup tomato juice and pulp
- 1 teaspoon onion juice
Method
- 1 Melt the drippings in a pot.
- 2 Add the celery salt, pepper, flour, curry powder, and salt to the fat.
- 3 Gradually stir in the meat stock or water.
- 4 Add the cooked legumes, turnips, carrots, celery, peas, tomato juice, and onion juice.
- 5 Cook for 20 minutes.
- 6 Serve very hot.
