Curried Veal And Onion Stew

Ingredients

  • 4 lbs veal breast, cut into 2-inch pieces
  • 2 quarts water
  • 12 whole black peppercorns
  • 12 whole allspice berries
  • Butter for frying
  • 4 onions
  • 2 tbsp curry powder
  • 2 tbsp flour
  • 1 tsp salt
  • Cold water for slurry

Method

  1. 1 Place veal trimmings, water, peppercorns, and allspice in a stew-pan. Bring to a boil, skim clean, and simmer for 1.5 hours. Strain the broth and set aside.
  2. 2 Fry the veal pieces and sliced onions in butter until nicely browned. Add the strained broth to the pan and bring to a boil, skimming clean again.
  3. 3 Simmer the soup for 30 minutes. Meanwhile, mix curry powder, flour, salt, and a little cold water into a smooth slurry.
  4. 4 Stir the slurry into the simmering soup. Cook gently until the veal is tender and the soup is thickened, about 15-20 minutes.
