Curried Turkey, Apple, And Rice Soup

Ingredients

  • 7 cups turkey stock
  • 3 apples, chopped
  • 2 carrots, diced
  • 1 small onion, chopped
  • 3 tbsp shortening
  • ½ cup flour
  • 1 tbsp salt
  • 1½ tsp paprika
  • ¼ tsp nutmeg
  • ½ cup celery, finely chopped
  • 4 tbsp washed rice

Method

  1. 1 Place 4 cups turkey stock, apples, 1 carrot, and onion in a saucepan. Bring to a boil and cook slowly until vegetables are soft.
  2. 2 Melt shortening in a separate saucepan. Add flour and stir until well browned.
  3. 3 Add 2 cups turkey stock to the roux. Cook for 10 minutes, then stir into the vegetable mixture.
  4. 4 Bring to a boil, then strain the soup back into the saucepan.
  5. 5 Season with salt, paprika, and nutmeg. Add remaining 3 cups stock, celery, carrot, and rice.
  6. 6 Bring to a boil and cook very slowly for 35 minutes. Adjust seasoning and serve.
