Curried Turkey, Apple, And Rice Soup
Ingredients
- 7 cups turkey stock
- 3 apples, chopped
- 2 carrots, diced
- 1 small onion, chopped
- 3 tbsp shortening
- ½ cup flour
- 1 tbsp salt
- 1½ tsp paprika
- ¼ tsp nutmeg
- ½ cup celery, finely chopped
- 4 tbsp washed rice
Method
- 1 Place 4 cups turkey stock, apples, 1 carrot, and onion in a saucepan. Bring to a boil and cook slowly until vegetables are soft.
- 2 Melt shortening in a separate saucepan. Add flour and stir until well browned.
- 3 Add 2 cups turkey stock to the roux. Cook for 10 minutes, then stir into the vegetable mixture.
- 4 Bring to a boil, then strain the soup back into the saucepan.
- 5 Season with salt, paprika, and nutmeg. Add remaining 3 cups stock, celery, carrot, and rice.
- 6 Bring to a boil and cook very slowly for 35 minutes. Adjust seasoning and serve.
