Curried Turkey And Potato Soup
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 cup diced onion
- 1 cup diced celery
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons flour
- 3/4 tablespoon curry powder
- 1/4 teaspoon cinnamon
- 4 cups low-sodium chicken broth
- 2 cups chopped carrots
- 2 cups chopped spinach
- 3 small red potatoes, diced
- 3 cups cooked turkey, diced
- Cranberry sauce, for garnish
Method
- 1 Heat olive oil and butter in a large pot over medium heat. Add onion and celery; cook for 7 minutes, stirring occasionally.
- 2 Stir in flour, curry powder, and cinnamon; cook for 2-3 minutes, stirring constantly.
- 3 Pour in chicken broth, scraping up brown bits. Bring to a simmer.
- 4 Add carrots, spinach, potatoes, and turkey. Bring to a boil, then reduce heat to low.
- 5 Simmer covered for 30 minutes, stirring occasionally. Serve garnished with cranberry sauce.
