  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons flour
  • 3/4 tablespoon curry powder
  • 1/4 teaspoon cinnamon
  • 4 cups low-sodium chicken broth
  • 2 cups chopped carrots
  • 2 cups chopped spinach
  • 3 small red potatoes, diced
  • 3 cups cooked turkey, diced
  • Cranberry sauce, for garnish

Method

  1. 1 Heat olive oil and butter in a large pot over medium heat. Add onion and celery; cook for 7 minutes, stirring occasionally.
  2. 2 Stir in flour, curry powder, and cinnamon; cook for 2-3 minutes, stirring constantly.
  3. 3 Pour in chicken broth, scraping up brown bits. Bring to a simmer.
