  • butter for sautéing

  • 1 cup stock
  • salt to taste
  • paprika to taste
  • Worcestershire sauce to taste
  • curry powder to taste

Method

  1. 1 Soak the shad roe in water for 30 minutes, then scald, drain, cool, and slice it.
  2. 2 Sauté the roe slices in butter until cooked, then drain the excess butter.
  3. 3 Cook the flour in the remaining butter, then stir in the stock and cook until thickened.
  4. 4 Season the sauce with salt, paprika, Worcestershire sauce, and curry powder.
