Curried Shad Roe With Brown Sauce
Ingredients
- 1 shad roe
- water for soaking
- butter for sautéing
- 1 tbsp flour
- 1 cup stock
- salt to taste
- paprika to taste
- Worcestershire sauce to taste
- curry powder to taste
Method
- 1 Soak the shad roe in water for 30 minutes, then scald, drain, cool, and slice it.
- 2 Sauté the roe slices in butter until cooked, then drain the excess butter.
- 3 Cook the flour in the remaining butter, then stir in the stock and cook until thickened.
- 4 Season the sauce with salt, paprika, Worcestershire sauce, and curry powder.
- 5 Pour the hot sauce over the shad roe and serve immediately.
