Curried Rice With Baked Tomatoes

Ingredients

  • 1/2 lb Patna rice
  • 2 tsp curry powder
  • Salt to taste
  • 1 oz butter
  • 1 lb tomatoes
  • Pepper to taste

Method

  1. 1 Wash rice and boil briefly in cold water, then drain.
  2. 2 Mix curry powder with 1 pint cold water, add rice, salt, and butter.
  3. 3 Cover with buttered paper and simmer gently for 20 minutes until water is absorbed.
  4. 4 Wash tomatoes, place in a tin with a few spoonfuls of water, butter, salt, and pepper.
  5. 5 Bake tomatoes for 15-20 minutes until tender.
  6. 6 Serve rice in the center of a dish with tomatoes around it, pouring the cooking liquid over the rice.
