Curried Rice With Baked Tomatoes
Ingredients
- 1/2 lb Patna rice
- 2 tsp curry powder
- Salt to taste
- 1 oz butter
- 1 lb tomatoes
- Pepper to taste
Method
- 1 Wash rice and boil briefly in cold water, then drain.
- 2 Mix curry powder with 1 pint cold water, add rice, salt, and butter.
- 3 Cover with buttered paper and simmer gently for 20 minutes until water is absorbed.
- 4 Wash tomatoes, place in a tin with a few spoonfuls of water, butter, salt, and pepper.
- 5 Bake tomatoes for 15-20 minutes until tender.
- 6 Serve rice in the center of a dish with tomatoes around it, pouring the cooking liquid over the rice.
