Curried Rice And Vegetable Salad
Ingredients
- 1 cup cooked peas or carrots
- 1 cup cooked cold rice
- 1/3 cup oil
- 1 tablespoon vinegar
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne
- 1/2 teaspoon curry powder
Method
- 1 Mix the peas or carrots with the cold rice.
- 2 Whisk together the oil, vinegar, salt, cayenne, and curry powder to make the dressing.
- 3 Toss the vegetables and rice with the dressing.
- 4 Serve cold plain, on lettuce leaves, or in nests made of cabbage or celery.
