Curried Rabbit Stew With Onions
Ingredients
- 1 fowl or rabbit, cut into joints
- 2 oz butter
- 2 medium onions, sliced
- 1/2 cup broth
- 1-2 tbsp curry powder
- 1 tsp flour
- 1 tsp salt
- Cold water
- 2 tbsp cream or milk
- Rice, for serving
Method
- 1 Cut fowl or rabbit into joints and wash clean. Melt butter in a stew-pan over medium-high heat.
- 2 Add meat and sliced onions. Cook until lightly browned, then add broth and simmer for 20 minutes.
- 3 Mix curry powder, flour, and salt with cold water to form a smooth paste. Stir into the stew-pan and boil, shaking well.
- 4 Simmer for 20 minutes longer. Remove meat and strain the sauce through a sieve.
- 5 Stir cream or milk into the sauce and bring to a boil. Pour sauce over meat and serve with rice.
