Curried Rabbit Stew With Onions

Ingredients

  • 1 fowl or rabbit, cut into joints
  • 2 oz butter
  • 2 medium onions, sliced
  • 1/2 cup broth
  • 1-2 tbsp curry powder
  • 1 tsp flour
  • 1 tsp salt
  • Cold water
  • 2 tbsp cream or milk
  • Rice, for serving

Method

  1. 1 Cut fowl or rabbit into joints and wash clean. Melt butter in a stew-pan over medium-high heat.
  2. 2 Add meat and sliced onions. Cook until lightly browned, then add broth and simmer for 20 minutes.
  3. 3 Mix curry powder, flour, and salt with cold water to form a smooth paste. Stir into the stew-pan and boil, shaking well.
  4. 4 Simmer for 20 minutes longer. Remove meat and strain the sauce through a sieve.
  5. 5 Stir cream or milk into the sauce and bring to a boil. Pour sauce over meat and serve with rice.
