Curried Rabbit And Tomato Stew
Ingredients
- 1 rabbit, washed and cut into large pieces
- 1 piece butter
- 1 piece oil
- 1 rabbit liver, hashed
- 1 small piece corned beef, hashed
- 1 onion, hashed
- 1 celery stalk, hashed
- 1 carrot, hashed
- 1 parsley bunch, hashed
- Salt and pepper to taste
- Tomato sauce
- 1 additional piece butter
Method
- 1 Place rabbit pieces in a pan over heat to drain excess water. Remove when dry.
- 2 In a saucepan, melt butter and oil. Add hashed rabbit liver, corned beef, onion, celery, carrot, and parsley. Season with salt and pepper.
- 3 Stir frequently until the mixture is browned.
- 4 Add tomato sauce and another piece of butter. Stir to combine.
