Curried Quinoa With Cauliflower And Peas

  • 1 cup quinoa, rinsed
  • 1 cup frozen peas
  • 2 garlic cloves, chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin
  • 4 teaspoons curry powder
  • 1 cup vegetable broth
  • 1 head cauliflower (about 1 1/2 pounds), trimmed and cut into small florets
  • 1/3 cup plain low-fat yogurt (about 5 1/2 tablespoons)
  • 1/2 cup roasted unsalted cashews
  • 1/4 cup fresh chopped cilantro
  • 2 tablespoons lime juice
  • 2 tablespoons chopped green onion
  • Pinch of salt, optional

Method

  1. 1 Cook quinoa until tender according to package directions.
  2. 2 Heat oil in a saucepan over medium-high heat. Add curry powder and cumin; cook for 30 seconds until fragrant.
  3. 3 Stir in broth and garlic. Bring to a boil, then add cauliflower. Cover and return to a boil.
  4. 4 Reduce heat to medium and simmer for 3 minutes. Add frozen peas and cook until cauliflower is tender.
  5. 5 Remove from heat. Whisk 2 tablespoons of the cooking broth into the yogurt. Stir the yogurt mixture, quinoa, cashews, and cilantro into the cauliflower.
  6. 6 Sprinkle with green onion, drizzle with lime juice, and add salt if desired.
