Curried Quinoa With Cauliflower And Peas
Ingredients
- 1 cup quinoa, rinsed
- 1 cup frozen peas
- 2 garlic cloves, chopped
- 2 tablespoons olive oil
- 1/2 teaspoon cumin
- 4 teaspoons curry powder
- 1 cup vegetable broth
- 1 head cauliflower (about 1 1/2 pounds), trimmed and cut into small florets
- 1/3 cup plain low-fat yogurt (about 5 1/2 tablespoons)
- 1/2 cup roasted unsalted cashews
- 1/4 cup fresh chopped cilantro
- 2 tablespoons lime juice
- 2 tablespoons chopped green onion
- Pinch of salt, optional
Method
- 1 Cook quinoa until tender according to package directions.
- 2 Heat oil in a saucepan over medium-high heat. Add curry powder and cumin; cook for 30 seconds until fragrant.
- 3 Stir in broth and garlic. Bring to a boil, then add cauliflower. Cover and return to a boil.
- 4 Reduce heat to medium and simmer for 3 minutes. Add frozen peas and cook until cauliflower is tender.
- 5 Remove from heat. Whisk 2 tablespoons of the cooking broth into the yogurt. Stir the yogurt mixture, quinoa, cashews, and cilantro into the cauliflower.
- 6 Sprinkle with green onion, drizzle with lime juice, and add salt if desired.
