Curried Potato Gratin

Ingredients

  • 6 good-sized potatoes, parboiled
  • 1 oz butter
  • 1 tsp curry powder
  • 3/4 pint milk
  • 4 tsp fine wheatmeal
  • salt to taste
  • lemon juice to taste

Method

  1. 1 Slice parboiled potatoes into a saucepan and pour milk over them.
  2. 2 Smooth curry powder with a little water and pour over potatoes. Add butter and salt.
  3. 3 Cook gently until potatoes are soft.
  4. 4 Thicken with wheatmeal previously smoothed with a little milk or water.
  5. 5 Simmer for 2-3 minutes, add lemon juice, and serve.
