Curried Potato And Onion Skillet
Ingredients
- 1/4 cup margarine or butter
- 1 small onion, finely chopped
- 3 cups potatoes, cubed
- 3/4 cup chicken broth
- 1/2 tablespoon curry powder
- 1/2 tablespoon lemon juice
Method
- 1 Peel and finely chop the onion. Peel and cube the potatoes into 1-inch pieces.
- 2 Boil potatoes in a saucepan until soft. Drain, then cover with ice-cold water.
- 3 Melt butter in a skillet over medium heat. Sauté onion until yellow.
- 4 Drain potatoes and add to skillet. Stir until they absorb the butter.
- 5 Add chicken broth, curry powder, and lemon juice. Cook until liquid is absorbed.
