Curried Patna Rice
Ingredients
- 1 lb Patna rice
- 1 quart cold water
- 2 tsp curry powder
- 1 oz butter
- salt to taste
Method
- 1 Wash the rice thoroughly.
- 2 Mix the curry powder with a small amount of water to form a paste.
- 3 Combine the rice, remaining water, and curry mixture in a saucepan over the fire.
- 4 Add the butter and salt to taste.
- 5 Bring to a slow boil, stirring occasionally to prevent sticking.
- 6 Once boiling, cover with a buttered piece of paper and cook gently without stirring.
- 7 Serve when all water is absorbed and rice is tender but not soft, about 15-20 minutes.
