Curried Patna Rice

Ingredients

  • 1 lb Patna rice
  • 1 quart cold water
  • 2 tsp curry powder
  • 1 oz butter
  • salt to taste

Method

  1. 1 Wash the rice thoroughly.
  2. 2 Mix the curry powder with a small amount of water to form a paste.
  3. 3 Combine the rice, remaining water, and curry mixture in a saucepan over the fire.
  4. 4 Add the butter and salt to taste.
  5. 5 Bring to a slow boil, stirring occasionally to prevent sticking.
  6. 6 Once boiling, cover with a buttered piece of paper and cook gently without stirring.
  7. 7 Serve when all water is absorbed and rice is tender but not soft, about 15-20 minutes.
