Curried Oyster And Egg Sandwiches

Ingredients

  • 12 slices white bread, crusts removed
  • 2 hard-boiled eggs, finely chopped or sieved
  • 6 pickled oysters, drained
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • ¼ cup heavy cream
  • 1 teaspoon onion juice
  • 1 teaspoon curry powder
  • ½ teaspoon turmeric

Method

  1. 1 Butter one side of each bread slice. Spread a thin layer of chopped hard-boiled egg on the unbuttered side of each slice.
  2. 2 Place the soft parts of six pickled oysters in the center of the egg-covered slices.
  3. 3 In a small saucepan, mix butter and flour without melting. Add cream, onion juice, curry powder, and turmeric. Bring to a boil, stirring constantly.
  4. 4 Remove sauce from heat and let it cool completely. Spread a thin layer of the cold sauce over the oysters.
  5. 5 Top with remaining bread slices, buttered side out. Press gently and serve immediately.
