Curried Oyster And Egg Sandwiches
Ingredients
- 12 slices white bread, crusts removed
- 2 hard-boiled eggs, finely chopped or sieved
- 6 pickled oysters, drained
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- ¼ cup heavy cream
- 1 teaspoon onion juice
- 1 teaspoon curry powder
- ½ teaspoon turmeric
Method
- 1 Butter one side of each bread slice. Spread a thin layer of chopped hard-boiled egg on the unbuttered side of each slice.
- 2 Place the soft parts of six pickled oysters in the center of the egg-covered slices.
- 3 In a small saucepan, mix butter and flour without melting. Add cream, onion juice, curry powder, and turmeric. Bring to a boil, stirring constantly.
- 4 Remove sauce from heat and let it cool completely. Spread a thin layer of the cold sauce over the oysters.
- 5 Top with remaining bread slices, buttered side out. Press gently and serve immediately.
