Curried Mutton Coconut Soup

Ingredients

  • 1 pound mutton (neck or ribs)
  • 1 onion
  • 1 teaspoon curry powder
  • 1 tablespoon peanut butter
  • ½ cup fresh coconut
  • 1 tablespoon flour (optional, for thickening)
  • Rice, for serving
  • Lemon juice, for serving

Method

  1. 1 Stew the mutton in water until tender. Remove the meat from the broth and set aside.
  2. 2 Fry the chopped onion with the curry powder until nicely browned.
  3. 3 Stir in the peanut butter and fresh coconut, mixing into a smooth paste.
  4. 4 Add the paste to the mutton broth and return the shredded mutton to the soup.
  5. 5 If the soup is not thick enough, stir in a little flour to thicken.
  6. 6 Serve the soup hot with boiled rice and lemon juice on the side.
