Curried Mutton Coconut Soup
Ingredients
- 1 pound mutton (neck or ribs)
- 1 onion
- 1 teaspoon curry powder
- 1 tablespoon peanut butter
- ½ cup fresh coconut
- 1 tablespoon flour (optional, for thickening)
- Rice, for serving
- Lemon juice, for serving
Method
- 1 Stew the mutton in water until tender. Remove the meat from the broth and set aside.
- 2 Fry the chopped onion with the curry powder until nicely browned.
- 3 Stir in the peanut butter and fresh coconut, mixing into a smooth paste.
- 4 Add the paste to the mutton broth and return the shredded mutton to the soup.
- 5 If the soup is not thick enough, stir in a little flour to thicken.
- 6 Serve the soup hot with boiled rice and lemon juice on the side.
