Curried Mutton And Rice Pilaf
Ingredients
- 6-8 ribs neck of mutton
- 12 whole cloves
- 1 small piece ginger
- 12 grains black pepper
- 1 pinch cinnamon
- 1 pinch mace
- 1 clove garlic
- Water
- Butter
- Small onions, chopped
- 1 tbsp curry powder
Method
- 1 Remove skin and fat from mutton ribs. Place meat, fat, cloves, ginger, pepper, cinnamon, mace, and garlic in a stewpan with enough water to cover.
- 2 Stew ingredients until meat is tender. Remove meat and set aside.
- 3 Fry meat in butter until light brown. Fry chopped onions in butter until very dry.
- 4 Combine meat, onions, and frying butter with the stewing liquid and spices. Stir in curry powder and half an ounce of butter.
- 5 Add half-boiled rice to the mixture. Stew together until rice is cooked and gravy is absorbed.
- 6 Serve hot, optionally topping with plain boiled rice for presentation.
