Curried Lobster With Rice And Bananas
Ingredients
- 3 tablespoons butter
- 2 small onions, chopped fine
- 1 tablespoon flour
- 2 cups stock
- Salt and pepper to taste
- Juice of 1 lemon
- 1 tablespoon curry powder
- 1 boiled lobster, meat removed
- Boiled rice, for serving
- Ice-cold bananas, for serving
Method
- 1 Melt butter in a pan and fry chopped onions until softened.
- 2 Dredge with flour and cook until brown.
- 3 Add stock, salt, pepper, lemon juice, and curry powder mixed with cold water. Cook until thick.
- 4 Add lobster meat, reheat gently, and serve with boiled rice and ice-cold bananas.
