Curried Lentils With Apple And Onion
Ingredients
- 1 pint soaked lentils
- 1 pint water
- 1½ ounces butter
- 1 small apple
- 1 onion
- 1 pinch powdered mace
- 1 teaspoon flour
- 1 teaspoon salt
- 6 peppercorns
- ½ teaspoon white sugar
- 1 teaspoon curry powder
- 2 teaspoons vinegar
Method
- 1 Simmer lentils with peppercorns (tied in muslin) and mace for 1 hour.
- 2 Add salt, remove peppercorns, and strain the lentils.
- 3 Slice onion and mince apple; fry together in butter for 10 minutes.
- 4 Place fried onion and apple in a stewpan with 2 tablespoons of lentils, sugar, flour, and curry powder; mix well.
- 5 Add lentil liquid and simmer for 30 minutes, stirring frequently.
- 6 Add vinegar before serving; serve with rice on the side.
