Ingredients

  • 1 pint soaked lentils
  • 1 pint water
  • 1½ ounces butter
  • 1 small apple
  • 1 onion
  • 1 pinch powdered mace
  • 1 teaspoon flour
  • 1 teaspoon salt
  • 6 peppercorns
  • ½ teaspoon white sugar
  • 1 teaspoon curry powder
  • 2 teaspoons vinegar

Method

  1. 1 Simmer lentils with peppercorns (tied in muslin) and mace for 1 hour.
  2. 2 Add salt, remove peppercorns, and strain the lentils.
  3. 3 Slice onion and mince apple; fry together in butter for 10 minutes.
  4. 4 Place fried onion and apple in a stewpan with 2 tablespoons of lentils, sugar, flour, and curry powder; mix well.
  5. 5 Add lentil liquid and simmer for 30 minutes, stirring frequently.
  6. 6 Add vinegar before serving; serve with rice on the side.
