Curried Lentil Stew With Rice
Ingredients
- 3 tablespoons Crisco
- 1/2 cup lentils
- 1/2 cup milk
- 1/2 cup water
- 1 teaspoon curry powder
- 1 small onion
- 1 tablespoon lemon juice
- 1 cup boiled rice
- Salt and pepper to taste
Method
- 1 Wash lentils and soak them in milk for twelve hours.
- 2 Melt Crisco, slice onion, and fry onion until pale brown.
- 3 Add curry powder, milk, water, seasonings, and lentils.
- 4 Simmer for two hours.
- 5 Add lemon juice just before serving.
- 6 Serve with boiled rice.
