Curried Lentil Rice Bake
Ingredients
- 1 ¾ cup lentils
- 1 ¾ cup rice
- 1 lb fresh tomatoes or ½ tin canned tomatoes
- 2 tsp curry powder
- 3 eggs, well beaten
- 2 oz butter
- breadcrumbs
- salt to taste
Method
- 1 Roast rice in half the butter in a frying pan until browned.
- 2 Add rice to 1½ pints water with cleaned lentils; cook until tender, then cool slightly.
- 3 Peel and slice tomatoes; arrange in a buttered pie dish.
- 4 Mix cooled rice and lentils with curry dissolved in 1 tbsp water, beaten eggs, and salt.
- 5 Spread mixture over tomatoes, top with breadcrumbs and remaining butter pieces.
- 6 Bake at 350°F for 45 to 60 minutes until golden.
