Curried Lentil Rice Bake

Ingredients

  • 1 ¾ cup lentils
  • 1 ¾ cup rice
  • 1 lb fresh tomatoes or ½ tin canned tomatoes
  • 2 tsp curry powder
  • 3 eggs, well beaten
  • 2 oz butter
  • breadcrumbs
  • salt to taste

Method

  1. 1 Roast rice in half the butter in a frying pan until browned.
  2. 2 Add rice to 1½ pints water with cleaned lentils; cook until tender, then cool slightly.
  3. 3 Peel and slice tomatoes; arrange in a buttered pie dish.
  4. 4 Mix cooled rice and lentils with curry dissolved in 1 tbsp water, beaten eggs, and salt.
  5. 5 Spread mixture over tomatoes, top with breadcrumbs and remaining butter pieces.
  6. 6 Bake at 350°F for 45 to 60 minutes until golden.
